PROBLEM TO BE SOLVED: To provide a method by which activities of each enzyme are held even when a solution containing transglutaminase, and glucose oxidase and/or α-glucosidase is held for 24 h; to provide a method for producing a food having improved properties and taste; and to provide an enzyme preparation for modifying the food.SOLUTION: The method for producing the food uses (A) the transglutaminase, and the glucose oxidase and/or the α-glucosidase, (B) at least one of acidic substance selected from the group consisting of phosphoric acid, a phosphoric acid salt, an organic acid and an amino acid, and (C) at least one basic substance selected from the group consisting of a phosphoric acid salt, a carbonic acid salt, a citric acid salt, a basic amino acid and calcium oxide. |
