PROBLEM TO BE SOLVED: To provide lightly pickled vegetable having excellent preservation stability and producible at a low cost, and a method for improving preservation stability of the lightly pickled vegetable.SOLUTION: The lightly pickled vegetable is composed of vegetables and a seasoning liquid and contains nisin. The method for improving the preservation stability of the lightly pickled vegetable comprises addition of nisin to the lightly pickled vegetable composed of vegetables and the seasoning liquid. |
