<P>PROBLEM TO BE SOLVED: To provide a method for producing tuna tail steak which sustains juiciness, sufficiently contains collagen and a delicious taste, gives a flavor having a body, has a soft and non-collapsible shape, and can, if necessary, quickly give a finished product from a preliminarily frozen half-finished product. <P>SOLUTION: The method for producing the tuna tail steak includes sequentially performing at least the following: (A) the process for removing the scales and fin of a tuna tail and then cutting the tuna tail into round slices to obtain main materials 1 having prescribed sizes; (B) the process for preliminarily seasoning the main material 1, and then quickly frying the main material 1 with a frying pan to give a uniformly light-browned frying color to the surface of the main material 1; (C) the closing process for packing the browned main material 1; (D) the process for warming the packed main material 1 in hot water; and (E) the cooking process for cooking the main material 1. <P>COPYRIGHT: (C)2010,JPO&INPIT |
