PROBLEM TO BE SOLVED: To provide a method for producing boiled noodles for preservation by which chilled noodles or frozen noodles capable of providing the noodles hardly having sloppiness of the surfaces of the noodle lines and having the same flavor and texture as the ones just after boiling dried noodles or row noodles even if the chilled noodles or frozen noodles are reconsituted with hot water, and good in attachment of soup and source can be produced because the surfaces of the noodle lines properly release the water to be shrunk and strengthened like paste. SOLUTION: This method for producing the boiled noodles for preservation is characterized in that the boiled noodles are subjected to air-drying treatment after a treatment with cooling water to remove 0.5-5% water. |
