摘要 PROBLEM TO BE SOLVED: To provide bread without feeling oily flavor even on adding more oils and fats as compared with conventional ones to increase the taste and flavor, and also excellent in soft texture and having a good inner phase, and a method for producing the same.SOLUTION: This method for producing the bread is provided by comprising (a) a process of producing pie dough by using 50 to 200 pts.mass oils and fats based on 100 pts.mass cereal flour raw material containing 0.5 to 15 mass% alpharized wheat powder or alpharized starch based on the cereal flour raw material consisting mainly of the wheat flour; (b) a process of forming chip like pie dough by forming the pie dough as the chip like form having 1 to 5 mm thickness and both of 10 to 30 mm length and width; (c) a process of adding 10 to 80 pts.mass chip like pie dough to 100 pts.mass cereal powder raw material consisting mainly of the wheat flour in producing the bread dough by using the chip like pie dough: (d) after adding the chip like pie dough and in kneading for forming bread dough, a process of performing kneading for 20 to 80% time of kneading by taking the time for mixing the chip like pie dough uniformly in the bread dough as 100%; and (e) then, a process of performing the bread production by following a normal method.
