摘要 A method for making a sweet bar enriched with heme iron lies in preparing a raw material for producing: preparing a sugar syrup; making a toffee half-finished product; boiling a mixture for obtaining the toffee mass up to a moisture content of 25 %; filtering the toffee half-finished product and boiling up to a dry matter content of 9-10 %; cooling the toffee mass up to a temperature of 80-85 °C and transferring into a mixer (in doing so the temperature is lowered up to 75-80 °C). While pouring the components, the dietetic additive «Kalhem» is added to the composition of toffee mass, then the toffee mass is mixed for 40-45 min. while keeping a temperature of 60-70 °C, unloading into metal moulds covered with fat is performed, cooling up to a temperature of 40-45 °C at a relative air moisture of 75 %; forming as layers of at least in width, cutting into bars of 50± by mass, drying at a temperature of 18-20 °C and air humidity of 75 % for 72 hrs., packaging.
