A method for the production of fermented malt comprises preliminary grain preparation by sorting, washing with water and disinfection thereof, grain steeping, its sprouting, fermentation of green malt produced during sprouting, and drying fermented malt. After preliminary preparation grain is held in wet condition during of no less than 3 hours to reaching humidity of no less than 25 %.
