PROBLEM TO BE SOLVED: To provide a quality improver for a fried bean curd which provides good appearance and texture of the fried bean curd, and is capable of inhibiting the syneresis.SOLUTION: The quality improver for the fried bean curd contains dietary fibers derived from citrus. The fried bean curd which has both of good appearance and texture, and from which the syneresis is suppressed, can be provided by using the quality improver for the fried bean curd. |
