PURPOSE: A producing method of kimchi including fresh ginseng blocks is provided to offer nutrients of fresh ginseng to the kimchi by adding the fresh ginseng blocks when mixing seasonings. CONSTITUTION: A producing method of kimchi including fresh ginseng blocks comprises the following steps: washing fresh ginseng, and crushing to make fresh ginseng puree; adding a red ginseng extract and fructo-oligosaccharide to the puree; pouring the mixture and freeze-drying to obtain the fresh ginseng blocks; washing and cutting kimchi ingredients; preparing ingredients for seasoning, and inserting the fresh ginseng blocks; and mixing the obtained seasonings with pre-processed kimchi ingredients. |
