Preparation of canola protein isolate involving isoelectric precipitation

Disclosed herein is a process for preparing a canola protein isolate, which includes: a) extracting a canola oil seed meal to cause solubilisation of canola protein in the canola oil seed meal and to form an aqueous protein solution having a pH of 5 to 6.8; b) separating the aqueous protein solution from residual canola oil seed meal; c) acidifying the aqueous protein solution to a pH of 3 to 4 to isoelectrically precipitate there from a canola protein isolate having a protein content of at least 90 wt% (N x 6.25) and consisting predominantly of 7S canola protein; and d) separating the isoelecrtically precipitate canola protein isolate from supernatant. Also disclosed is an acidified beverage containing a canola protein isolate as prepared by a process as defined above.
