<p><P>PROBLEM TO BE SOLVED: To provide a method for real-time detection of Salmonella using a cleavable chimeric probe. <P>SOLUTION: There is provided a method for real-time detection of Salmonella species in foods and on surfaces. Salmonella is enriched in culture medium and is increased in cell density prior to analysis. DNA is recovered by dissolution in the presence of an azide, a proteinase K, and a detergent. The real-time detection of Salmonella species is carried out by the PCR reaction using a gene-specific primer and a cleavable chimeric fluorescent probe. The method is disclosed inner control samples to confirm a nucleic acid amplification and efficiency of detection.
