PROBLEM TO BE SOLVED: To provide a mixer for noodle dough enabling granulation by agitation to be efficiently conducted and also enabling the inner wall surface of the mixer body to be kept hygienic because of being easy to clean the inner wall surface. SOLUTION: The mixer 30 includes: the mixer body 31 to be charged with noodle feedstocks; a rotary shaft 32 arranged in parallel to the mixer body 31 thereinside and fitted with a plurality of agitating blades 35 on the outer circumferential surface of the mixer body 31; a motor 37 to rotatingly drive the rotary shaft 32; and a kneading water-receiving saucer 40 to feed kneading water into the mixer body 31. The mixer 30 works as follows: while rotating the agitating blades 35 by rotatingly driving the rotary shaft 32 by the motor 37, kneading water is fed from the saucer 40 into the mixer body 31, thus kneading the noodle feedstocks charged into the mixer body 31. In the mixer 30, the bottom of the mixer body 31 is such that: its surface made by cutting with the plane vertical to the rotary shaft 32 lies along the rotary track of the respective tips of the agitating blades 35 and is formed polygonally outside the rotary track.
