The present invention consists of a method which allows discriminating pieces of fruit according to their maturity degree, for example for being able to carry out a method for discrimination in continuous processes for sorting harvested fruits, by means of dielectric spectroscopy techniques and which does not require the destruction of the product. The invention consists of taking two measurements of the loss factor, where each of the measurements is taken in a different frequency range to establish the maturity degree of the fruit based on both measurements. The process for the calibration of said method is also an object of the invention.
