<P>PROBLEM TO BE SOLVED: To provide a grain powder-processed product having good sweetness, elasticity, smoothness, soft feeling and meltability in the mouth, and maintaining the texture even after the lapse of time after the cooking. <P>SOLUTION: The grain powder-processed product is produced by adding a liquid ingredient to grain powder, wherein the liquid ingredient is obtained by subjecting a mixture containing the grain powder and water to lactic fermentation. The method for producing the grain powder-processed product includes a step for obtaining the liquid ingredient by subjecting the mixture containing the grain powder and the water to the lactic fermentation, and a step for producing a dough by adding the liquid ingredient to the grain powder and kneading the resultant mixture. <P>COPYRIGHT: (C)2011,JPO&INPIT |
