<P>PROBLEM TO BE SOLVED: To provide a seasoning composition including excellent flavor derived from oyster flesh. <P>SOLUTION: The seasoning composition having an oyster extract as the main raw material includes ≥50 mg taurine per 100 g, and has a ratio of the total amount of calcium and magnesium to taurine of ≤30 wt.%.
