PROBLEM TO BE SOLVED: To provide an image processing apparatus and method, capable of color dropout processing in which a complicated removal color designation is solved and a user designated removal color can be accurately removed. SOLUTION: An image processing apparatus includes: a scanner unit comprised of RGB color sensors for scanning a color document; a removal color designating unit for setting a plurality of hue regions on a color plane and designating removal of a specific color in the hue regions; a hue angle calculating unit for finding out a hue angle of a lattice point of a three-dimensional (3D) LUT; an LUT value setting unit for determining the hue region including the hue angle, using a different conversion formula by hue region to set an LUT value of the lattice point, and setting the LUT value representing white to the lattice point included in the hue region of the removal color when the removal color is designated by the removal color designating unit; and an RGB/monochrome converting unit for converting RGB color signals acquired from the scanner unit into monochromatic signals using the 3D LUT.
