<P>PROBLEM TO BE SOLVED: To provide a method for evaluating objectively and easily the bad smell of a cooked product of seafood cooked by using edible oil and the degree of deterioration of the edible oil used for cooking the seafood. <P>SOLUTION: In a method for evaluating the bad smell of a cooked product of seafood evaluates the bad smell of the cooked product of seafood cooked by using the edible oil, the cooked product is heated at a temperature of 30-100°C, and an amount of an evaporated component is measured.
