METHOD FOR PRODUCING FOLIC ACID-CONTAINING EDIBLE PLANT, AND FOLIC ACID-CONTAINING SPROUT

PROBLEM TO BE SOLVED: To provide an edible plant containing folic acid in high concentration, and to provide a method for producing the folic acid-containing edible plant.

SOLUTION: The edible plant containing folic acid having a fresh weight (FW) of 200 μg/100 g, is obtained by constantly or intermittently soaking part of the edible plant in aqueous solution containing folic acid at a concentration of 0.1-1 mass% and having pH of 5.8-6.3 at a temperature of 10-25°C, and constantly or intermittently keeping the remaining part of the edible plant out of the folic acid-containing aqueous solution so as to allow the edible plant to make transpiration.
