PURPOSE: A method for manufacturing red ginseng using enzyme and ultra high-pressure is provided to increase beneficial components such as crude saponin and ginsenoside by adding enzyme in the red ginseng. CONSTITUTION: A method for manufacturing red ginseng using enzyme includes the following steps: processing the raw ginseng with the enzyme; processing the treated raw ginseng with extra-high voltage; drying the raw ginseng with a post-process(S42). In an enzyme treating step, Sumizyme MC, Multifect Pectinase FE or Cytolase PCL5 is used, and the raw ginseng is processed with Spezyme Prime amylase. |
