<P>PROBLEM TO BE SOLVED: To provide a liquid food composition for delivering ingested carotenoid (e.g., α-carotene, β-carotene and lycopene) and/or other physiologically active ingredients to human colon and insusceptible to polyphenol-protein reactions. <P>SOLUTION: There are provided the food composition containing at least 25 wt.%, based on the dry weight of total composition, of pectin having a degree of esterification (DE) of 30-45% and containing 70-90% of galacturonic acid unit and at least 0.2 wt.%, based on the dry weight of total composition, of carotenoid and/or other active ingredients, wherein the pectin is apple pectin, citrus pectin or their mixture; and the food composition wherein the carotenoid is encapsulated with the pectin. <P>COPYRIGHT: (C)2011,JPO&INPIT |
