摘要 <P>PROBLEM TO BE SOLVED: To provide dietary fiber for baked foods made of coarse-grained bran, wheat flour composition for baked foods blended with the dietary fiber, and bread or wheat flour baked foods made of the wheat flour composition for baked foods. <P>SOLUTION: A large lump containing epidermises generated at the initial stage of milling in which wheat grains (crude wheat) are opened to be separated into coarse hulls and coarse endosperms is made into bran from which most of the endosperm part is removed through the processes of crushing and removing the endosperm part. Thereafter, the bran is classified with a sieve into smaller one which passes sieve mesh and bigger one that does not pass. The invented dietary fiber for baked food is obtained by collecting the bigger one separating the smaller one, and is of characteristic of coarse bran. Baked foods for which the dietary fiber is used include bread or wheat flour baked foods. The invented wheat flour composition for baked foods is produced by blending preferably 3 to 7 wt.% of the dietary fiber with wheat flour.
