<P>PROBLEM TO BE SOLVED: To solve such a problem that cheese which is a fermented food is willingly eaten by young persons in a healthy aspect, but there are many elderly persons who do not like the cheese due to a cheese odor peculiar to the cheese; the cheese odor is not completely removed in the cheese by a conventional proposal; and there is a defect in a lack of flavor or texture as a food. <P>SOLUTION: The cheese preserved in sake lees and miso includes: a mixture of the sake lees with white miso; and cream cheese preserved in the mixture. A method for producing the cheese preserved in the sake lees and miso includes: kneading a desired amount of the sake less with a desired amount of the white miso; coating the periphery of a desired amount of the cream cheese therewith; and carrying out preserving of the resultant material therein in a low-temperature state for a prescribed period of time. <P>COPYRIGHT: (C)2011,JPO&INPIT |
