<P>PROBLEM TO BE SOLVED: To provide a method for producing a cooked rice food by which the cooked rice food having soft and preferable texture can be produced even by cooking the rice with water in a normal proportion, to provide the cooked rice food having the preferable texture, and to provide an enzyme preparation for improving the cooked rice food. <P>SOLUTION: The method for producing the cooked rice food includes using phosphodiesterase. <P>COPYRIGHT: (C)2011,JPO&INPIT |
