The present invention refers to a fortified tortilla which comprises soy dough, stabilisers and/or nixtamalized maize flour, and/or fresh masa for tortillas and/or water. The invention also refers to a process for obtaining said fortified tortilla from dry soy dough which comprises weighting the dry soy dough, pouring the potable water into the dough, adding hot water and sodium bicarbonate. The soy dough is continuously agitated, and then drained with a metallic strainer. The soy dough is milled in a stone mill for obtaining a treated soy dough which is mixed with nixtamalized flour and stabilisers or with fresh tortilla masa for obtaining a fortified masa. Said masa is cooked in a griddle or a metallic plate, the fortified masa being supplied to a mechanical tortilla making machine in order to obtain tortillas cooked in a continuous manner over rotating griddles heated by gas.
