摘要 <p>The method involves pre-treating a quantity of a food sample (a). A given quantity of the pretreated food sample is dissolved (b) in a buffer solution. The buffer solution dissolving an analyzed substance is provided (c) to react with a layer formulated on an analysis sample to carry out redox reaction. A reaction potential is provided (d) to a reaction electrode of the analysis sample by a measuring device to obtain an electrical signal. A content of the analyzed substance is obtained (e) from the electrical signal. Independent claims are also included for the following: (1) an analysis sample for implementation of a process for determination of oxidizing and reducing substances in food, comprising a substrate that is made of a material chosen from polyvinyl chloride, polyester, polyethylene terephthalate, polycarbonate, polypropylene, polyethylene, polybutylene, polystyrene, polyethylene-polyvinylidene fluoride, polyamide and Bakelite, a glass material , a glass fiber material and an aceramic material (2) a measurement device for implementation of the process for determination of oxidizing and reducing substances in a food, comprising a connection unit.</p>
