The method involves circulating combustion fumes and/or hot gases (F) to interior of a cooling chamber (1), and injecting a coolant (L) on the combustion fumes and/or hot gases in the cooling chamber. The cooled fumes and/or gas (F') is circulated in a recovery tank (3) connected to the cooling chamber, where the tank is provided with an inlet (3a) and an outlet (3b). A liquid (L') contained in a reserved volume (4) is transferred towards the tank to block the inlet and/or outlet by forming a liquid barrier to prevent circulation of the fumes and/or gas in downstream of the chamber. An independent claim is also included for an installation for cooling combustion fumes and/or hot gases.
