<p>A fryer which can also be used for a large-sized fryer device used in a factory facility, etc. and which separates an impure substance, which is discarded in conventional fryers, into water, oil, and sludge which respectively can be reused. A fryer provided with a storage tank (1) which stores cooking oil and also with a heater (4) which is disposed within the storage tank (1), wherein the fryer is also provided with: a centrifugal separator (7) which separates oil into three layers including water and sludge by the rotation of a rotating body (7b) in which the oil is contained, discharges the oil and the water, and separates and discharges the sludge accumulated on the inner wall of the rotating body (7b); an oil tank (8) which temporarily stores the oil separated by the centrifugal separator (7); an oil circulation pipe (6) which has a pump (13a) in the path, sucks the oil in the storage tank (1) to cause the oil to flow into the centrifugal separator (7), and returns the separated oil to the storage tank (1) through the oil tank (8); a water tank (9) which temporarily stores the water separated by the centrifugal separator (7); and a refuse receiving container (10) which receives the sludge separated by the centrifugal separator (7).</p> |
