摘要 <p><P>PROBLEM TO BE SOLVED: To provide a method for producing low-grade spirits made from sake lees or rice spirits (hereafter abbreviated as low-grade spirits made from sake lees as their general name). <P>SOLUTION: This method for producing the low-grade spirits made from sake lees comprises using sake lees as a raw material having isoamyl acetate content of≥4 mg/L, and setting malted rice percentage to≥10% but <50%. The raw material of the low-grade spirits made from sake lees is preferably sake lees from refined sake derived from rice having polished rice percentage of above 60 w/w%. The low-grade spirits made from sake lees obtained by the method has ethyl caproate content of 1.0-10.0 mg/L and isoamyl acetate content of 10.0-50.0 mg/L when converting alcohol concentration in a low-grade spirits product to 25 v/v%.
