The present invention relates to a method for producing products with a reduced PPO activity from potatoes. In particular the present invention relates to a method comprising the steps of providing one or more potatoes; rinsing the potatoes; disrupting the potatoes; adding at least one chelating agent and at least one inorganic acid; and isolating the products with a reduced PPO activity from the disrupted potatoes. Moreover the invention relates to products obtainable therefrom.
