摘要 PROBLEM TO BE SOLVED: To provide a method for producing a low-molecular mucin widely applicable to as a raw material such as for cosmetics, medical products and food. SOLUTION: The method includes the following steps a mucin raw material made of ionized mineral-incorporated jellyfish and/or jellyfish-derived extract is incorporated with one or more of Aspergillus oryzae, yeast, citric acid bacteria, lactic acid bacteria, acetic acid bacteria, and protease-containing Aspergillus oryzae, to effect fermentation; subsequently, the resultant fermented mucin raw material is mixed with one or more carboxyl-bearing organic acid selected from citric acid, lactic acid, acetic acid, tartaric acid, and malic acid, followed by being kept at 35-45°C to effect maturation, and then the resultant mixture is put to filtration and extraction. According to this method, the oxygen bonds in the raw material mucin are cleaved by the fermentative effects of the Aspergillus oryzae, lactic acid bacteria and/or the like to effect dispersion of the raw material mucin in the organic acid(s), and further, divalent minerals are bound as appropriate to the cleaved oxygen bonds' terminals and the situation is kept, therefore the raw material mucin has an extremely low-molecular weight compared with the conventional cases, thus the mucin is applied efficiently to cosmetics, medical products, or the like.
