<p><P>PROBLEM TO BE SOLVED: To obtain a wine or vinegar having a high citrulline content by a brewing method without depending on an addition method. <P>SOLUTION: The method for producing the watermelon wine includes brewing the watermelon juice-originated wine with an arginine-requiring yeast. The arginine-requiring yeast includes a strain NBRC10478, and a strain NBRC10479. By the present method, the wine or vinegar having a high citrulline content and high functions such as a high blood flow improvement can be provided, and the development of the uses of watermelon can be attained. <P>COPYRIGHT: (C)2011,JPO&INPIT</p> |
