摘要 PURPOSE: A producing method of coated rice containing citrus tangerina flavonoid, and the coated rice are provided to offer the stable taste and flavor of the rice, and to improve the palatability of the rice. CONSTITUTION: A producing method of coated rice containing citrus tangerina flavonoid comprises a step of coating rice with a citrus tangerine extract containing the citrus tangerina flavonoid. The citrus tangerine extract is citrus tangerine powder. The citrus tangerine extract is obtained by a juice extraction method using a screw-type extractor, a hot water extraction method, an UF extraction method, a column extraction method, or a freeze-drying method.
