摘要 The disclosed enzymatic treatment solution is used in a softening method for softening animal-based products comprising meat and/or seafood by means of an enzymatic treatment. The enzymatic treatment solution has a pH level at or above 8.0 and less than 10.5, and a measured salinity value, obtained by expressing the concentration of the electrolyte in the aforementioned solution, at or above 0.7% and less than 3.0%. Thus it is possible to reliably soften the animal-based foodstuffs while maintaining the texture and taste thereof, and thereby obtain softened foodstuffs which have a smooth texture.
