An emulsion comprising: dispersed particles each of which contains at least an N-acylamino acid diester,is dispersed as an oily phase in an aqueous phase, and has a volume average particle diameter of 1 to 100 nm inclusive; and at least one type of polysaccharide which has a substituent containing an aliphatic group.
