<P>PROBLEM TO BE SOLVED: To provide a method for producing a seasoning usable to a food as a seasoning, effective for imparting the food with body and especially suitable for foods to use fish and shellfish. <P>SOLUTION: The seasoning having good body is produced by heat-treatment of a powder mixture, an aqueous solution or an aqueous suspension added with a glutamic acid-containing yeast extract containing ≥20 wt.% of glutamic acid in terms of sodium salt, and a sugar. The compounding ratio of the glutamic acid-containing yeast extract to the sugar is preferably 40-99 pts.wt. to 60-1 pts.wt. <P>COPYRIGHT: (C)2011,JPO&INPIT |
