PURPOSE: A bio-ceramic food fermentation apparatus including the soy sauce jar function is provided to maintain the freshness of food by the homeostasis and the antioxidative effect of fermentation aged food. CONSTITUTION: A bio-ceramic food fermentation apparatus comprises the following: a fermentation space in an ultrafine porous fired ceramic(1) structure with a fermentation region(7); a ceramic partition wall(4) in a double partition structure for selectively inserting fermented soybean paste, mixed sauce, and vinegar; a fermented soybean paste filling layer(2) formed in between an outer ceramic wall and the ceramic partition wall for preventing food from contacting the sauce; and a heat insulation stand(3) using a non-woven fabric or a natural fabric for smoothening the pore flow. |
