PURPOSE: Fish paste mixed rice balls including a surface scorched rice layer, and a producing method thereof are provided to offer fish paste among rice grains. CONSTITUTION: A producing method of fish paste mixed rice balls comprises the following steps: steaming rice, and mixing the obtained rice with seasonings(S100); crushing semi-thawed soft fish flesh, adding salt into the fish flesh for eluting salt-soluble protein, and adding a sweetener and an additive into the flesh to obtain a fish flesh mixture(S200); mixing the rice with the fish flesh mixture(S300); and molding, frying, and cooling the mixture(S400).
