<P>PROBLEM TO BE SOLVED: To provide an apparatus by which an emulsified coagulant for Tofu, practically stably holding a W/O emulsified state without using an emulsifier by using an aqueous solution of an immediate effect coagulant for the Tofu and a food oil and fat produced by a general oil-squeezing and oil-manufacturing process. <P>SOLUTION: The apparatus for producing the tofu coagulant comprises a liquid food oil pumping pathway H1 for sending the liquid food oil from a liquid food oil tank T1 by a metering pump P1, an aqueous coagulant solution pumping pathway H2 for sending an aqueous solution of the coagulant from an aqueous coagulant solution tank T2 by another metering pump P2, and an emulsion dispersion machine M1 for stirring and mixing the liquid food oil with the aqueous coagulant solution to form an emulsification phase. The liquid food oil pumping pathway H1 is connected with the aqueous coagulant solution pumping pathway H2, and the aqueous coagulant solution in a predetermined ratio sent by the metering pump P2 is added to the liquid food oil sent by the metering pump P1 to produce the emulsified coagulant (excluding the one containing the emulsifier) in the W/O (water-in-oil) type. <P>COPYRIGHT: (C)2011,JPO&INPIT |
