PURPOSE: A producing of rice cake noodles with the excellent chewy texture is provided to offer the rice cake noodles to consumers in various age groups. CONSTITUTION: A producing of rice cake noodles comprises the following steps: soaking non-glutinous rice in water for more than 3hours, and dehydrating the rice and crushing; steaming the obtained rice powder, and drying the obtained rice cake before pulverizing; and mixing the rice cake powder with flour, salt, and cold water, and molding noodles with a noodle producing machine. |
