Producing a food product comprising animal fats and additional ingredients, comprises: providing at least a portion of fat in a liquid phase; spraying it in the liquid state; carrying out abrupt-cooling by heat exchange, preferably by direct heat exchange with a cryogenic liquid gas (10), preferably liquid nitrogen; and converting into granules (12); and processing the granules with additional ingredients to obtain the food product. |
