摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing fully-ripened fruit preserved in syrup which prevents softening of tissue, disappearance of flavor components and browning so as to readily and also inexpensively make the syrup-preserved fruit whose palate feeling and/or flavor inherent in the fruit are/is highly maintained and which has preservability. <P>SOLUTION: The method for producing fruit preserved in syrup comprises putting fully-ripened fruit and syrup liquid in a container to be hermetically sealed. The method comprises: putting boiled-up syrup liquid prepared by boiling up syrup liquid, and skin-attached fully-ripened fruit into the container to be hermetically sealed; hermetically sealing the container and leaving the container at a room temperature as it is to sterilize the skin-attached fully-ripened fruit with remaining heat of the syrup liquid; and cooling the syrup liquid together with the container followed by refrigerating the fully-ripened fruit and the syrup liquid together with the container to prevent decomposition and deterioration thereof. <P>COPYRIGHT: (C)2011,JPO&INPIT
