摘要 <P>PROBLEM TO BE SOLVED: To provide a meat quality improving agent for meat, allowing sufficient ingestion of highly unsaturated fat such as EPA and DHA as essential nutrient only by eating meat such as pork and beef, already playing a principal of meal in life of present people, avoiding problems such as overweight and lifestyle diseases brought with eating meat such as pork and beef, allowing meat to have mellow palate feeling with good melting feeling in the mouth, and making the production, preservation and handling extremely low in cost; and to provide a method for producing the improving agent. <P>SOLUTION: This meat quality improving agent for meat is obtained by collecting residue containing fish followed by crushing, sterilizing and storing in a tank, and adding Aspergillus oryzae to the product followed by fermenting so as to change into a nearly liquid state. The meat quality improving agent for meat is used to increase a content of high unsaturated fatty acid in meat fat by adding to livestock feed such as corn and letting livestock ingest.
