A diet supplement comprises native, water-soluble, unhydrolysed, substantially linear dextran of which 94 to 97% of the linkages joining the anhydroglucose units are 1,6-linkages. This is produced by the action of dextran-producing strains of Leuconestoc on sucrose present in an aqueous nutrient medium. Specified strains are Leuconestoc mesenteroides B-1146, B-1064, B-1119, B-512, B-1066 and B-1414 (NRRL designations). It may be compounded in admixture with essentially sugar-free food elements which may be dispersed in an essentially sugar free, potable liquid or it may be compounded in capsules or be used as a water-soluble coating for chewable pellets or it may be admixed with special dietetic foods or condiments, e.g. table salt. Other dieting factors, e.g. vitamins and minerals may also be included. |
