ANTI-CANCEROUS POTTERY VESSEL FERMENTED KIMCHI AND METHOD FOR PRODUCTION THEREOF

PURPOSE: Kimchi fermented in pottery with anticancer functionality and producing method thereof are provided to offer additional functionality to kimchi. CONSTITUTION: A producing method of kimchi fermented in pottery comprises the following: dressing Chinese cabbage before cutting into 4 pieces and salting the cut Chinese cabbage with 10% salt water for 12hours; washing the salted Chinese cabbage 3 times and dehydrating for 3hours; adding supplementary material spices into the salted Chinese cabbage for adjusting the final salinity to 2.2%; and inserting the obtained kimchi mixture into the pottery and storing for 4 days-4weeks at 4-25deg C. The pottery is either glazed pottery or unglazed pottery.
