PURPOSE: A Makkoli(white rice wine) using black garlic and a method manufacturing the same are provided to increase income of a garlic farm and improve Makkoli value. CONSTITUTION: A Makkoli using black garlic contains 5-15 weight% of black garlic, 0.1-2.0 weight% of Rubi Fructus, 2-8 weight% of Hovenia dulcis extract, and 0.1-0.3 weight% of asparagine. A method for manufacturing the Makkoli comprises: a step of immersing rice, steaming over 100°C, and naturally cooling; a step of mixing 40-50% of rice, seed malt, and water and fermenting at 25-30°C; a step of mixing 50-60% of remaining rice, 5-15 weight% of black garlic, 0.1-2.0 weight% of Rubi Fructus, 2-8 weight% of Hovenia dulcis extract, and 0.1-0.3 weight% of asparagine and fermenting; a step of adding brewage water, filtering, and sterilizing. |
