The oven for bread and pastries with a dehumidifying device comprises a chamber (10) with a laterally open enclosure (25) which houses one or more heating resistances (11) and one or more centrifugal fans (12) controlled in connection with a rotation inverter to circulate heated air inside said chamber (10), and an air outlet (13) for air to exit from inside the enclosure (25) to the outside. The air outlet (13) is associated to an arrangement of deflector elements (24) providing at least one inclined wall sloping downwardly from a position adjacent to the air outlet (13) towards the periphery of said at least one fan (12), determining a funnel configuration which restricts the flow of the air cast by said fan and strongly propels it towards the outlet (13) to capture and extract steam generated in the chamber (10). |
