The invention relates to wine industry, namely to a method for the production of grape wine.The method, according to the invention, comprises preparation of the grape must, clarification of said grape must, addition to the clarified grape must, in sequence, of at least one tannin and one lysozyme, as well as alcoholic fermentation to obtain said wine.The use of tannin and lysozime according to the invention enables to eliminate the sulfiting step involved in traditional methods and the sulfite-free wine thus obtained exhibits good chemical and microbiological stability. |
