摘要 PURPOSE: A ginger tea composition and a producing method thereof are provided to secure the excellent marketability by controlling the browning phenomenon of the ginger tea composition. CONSTITUTION: A ginger tea composition contains 15~25wt% of ginger slices obtained by dipping the ginger slices into a vitamin C solution after pre-processing with slightly acidic electrolyzed water, and blenching. The sweetness of the ginger tea composition is controlled by adding starch syrup, oligosaccharide, and sugar. The ginger tea composition additionally contains carrageenan, CMC, ginger concentrate, and a ginger diluted solution.
