摘要 Disclosed is a process for producing a snack food that has excellent shape-formability, requires a short baking time for production thereof, has good appearance after baking and a light and good texture, and is rarely cracked or broken, using soybean as the main raw material. Specifically disclosed is a process for producing a snack food using soybean as the main raw material, comprising the steps of: boiling a ground soybean material that is produced by finely grinding soybean, thereby producing a soybean suspension; adding a solidifying agent to the soybean suspension to solidify the soybean suspension; fracturing or crushing the solidified material to produce a slurry- or paste-like material; shaping the slurry- or paste-like material into a thin sheet-like material having a predetermined shape; and baking the shaped material.
