PURPOSE: A fermentation red ginseng prepared using Aureobasidium pullulans is provide to contain beta-glucan and to enhance absorption rate into the body. CONSTITUTION: A method for preparing fermentation red ginseng containing beta-glucan comprises: a step of inoculating Aureobasidium pullulans to red ginseng; and a step of fermenting for 24-72 hours. The method further comprises a step of preparing red ginseng extract using water or spirit at 50-90°C and a step of sterilizing the red ginseng at 90-130°C for 30 minutes to three hours. The Aureobasidium pullulans is Aureobasidium pullulans var. melanogenum.
